“Forty-two families don't sell forty-two coffees. They sell one, and it has to be right.”
The cooperative formed in 2016 to solve something basic: no single plot in the sierra has the volume for an export contract on its own.
They pool, cup and separate by quality rather than by owner. Lots below standard go to the domestic market; lots above it are labeled with the community's name.
They run a cupping lab in the guest region that any member can use — as far as we know, the only open-access one in the state.
