Every participating café pours a lot from the edition's region during the week. You walk it with the guide in hand, and every stop leaves a stamp. No ticket is needed: the cafés are open to everyone, and the sessions with limited seats are booked one by one.
Each lot is one coffee kept separate by plot, variety or process, so a single farm sends several.

Ricardo took over his father's farm in 2014, when leaf rust had wiped out two thirds of the sierra's production and half his neighbors had already switched out of coffee.
