Ernesto publicly defends Mexican breeding varieties that the specialty sector tends to look down on, and blind cupping has proved him right more than once.
Niebla Alta is ninety minutes from Xalapa, in the Huatusco zone, with fog almost daily from October to February.
He has taught free wet-milling courses for young growers on his own farm since 2019.
