La Providencia is the highest farm in this year's program and the farthest from everything: five hours from the coast, the last one on dirt road.
Melquiades has twelve years of handwritten fermentation logs — temperature, pH, hours. When a roaster asks why a lot came out different, the answer is on a page.
His Pink Bourbon is one of the very few plantings of that variety in the country.
